These blueberry cheesecake bars no bake are a creamy, fruity dessert with a crisp graham cracker crust and a vibrant blueberry topping no oven needed.
Ingredients
1 ½ cups graham cracker crumbs
6 tablespoons unsalted butter, melted
2 tablespoons sugar
16 oz cream cheese, softened
⅓ cup granulated sugar
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 cup heavy cream, cold
1 cup blueberry preserves or homemade compote
Instructions
1. Line an 8×8-inch pan with parchment paper.
2. Mix graham cracker crumbs, melted butter, and sugar in a bowl.
3. Press the crust into the pan firmly and chill for 1 hour.
4. Beat softened cream cheese until smooth; mix in sugar, vanilla, and lemon juice.
5. In another bowl, whip heavy cream until stiff peaks form.
6. Gently fold the whipped cream into the cream cheese mixture.
7. Spread the filling over the chilled crust and smooth the top.
8. Add the blueberry topping evenly across the surface.
9. Chill the bars for at least 6 hours or overnight before slicing and serving.
