For all the cookie butter lovers, these Biscoff Cookie Butter Cookies are soft, chewy, and packed with warm cinnamon and ginger flavors. Add your favorite mix-ins for a festive holiday treat!

  • Total Time: 22 minutes
  • Yield: 18 cookies

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon baking powder
  • 1 teaspoon salt
  • ½ cup butter, room temperature
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup Biscoff Spread
  • 1 ½ cup M&M’s, reserve some for the tops

Instructions

  1. Preheat the oven to 350°F and line a sheet pan with parchment paper.
  2. Whisk together the flour, baking soda, baking powder, and salt in a small bowl. Set aside.
  3. Using a mixer, add butter and sugars; mix on medium speed for 1-2 minutes until fully combined.
  4. Add the egg and vanilla, beat until combined, then mix in the Biscoff cookie butter for 30 seconds to 1 minute.
  5. Add the flour mixture and beat until just combined. Stir in any add-ins.
  6. Scoop large rounded spoonfuls of dough onto the prepared sheet pan, 2 inches apart. Slightly press down the cookie balls.
  7. Bake 12-14 minutes until edges are golden. Cookies may appear slightly gooey inside; that’s perfect.
  8. Transfer to a wire rack and cool 10 minutes before serving.

Notes

  • Do not overbake; cookies continue cooking after removal from the oven.
  • Customize with mix-ins like chocolate chips, nuts, or holiday candies.
  • Store in an airtight container to maintain softness.
