Ingredients
Scale
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ¾ teaspoon baking powder
- 1 teaspoon salt
- ½ cup butter, room temperature
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup Biscoff Spread
- 1 ½ cup M&M’s, reserve some for the tops
Instructions
- Preheat the oven to 350°F and line a sheet pan with parchment paper.
- Whisk together the flour, baking soda, baking powder, and salt in a small bowl. Set aside.
- Using a mixer, add butter and sugars; mix on medium speed for 1-2 minutes until fully combined.
- Add the egg and vanilla, beat until combined, then mix in the Biscoff cookie butter for 30 seconds to 1 minute.
- Add the flour mixture and beat until just combined. Stir in any add-ins.
- Scoop large rounded spoonfuls of dough onto the prepared sheet pan, 2 inches apart. Slightly press down the cookie balls.
- Bake 12-14 minutes until edges are golden. Cookies may appear slightly gooey inside; that’s perfect.
- Transfer to a wire rack and cool 10 minutes before serving.
Notes
- Do not overbake; cookies continue cooking after removal from the oven.
- Customize with mix-ins like chocolate chips, nuts, or holiday candies.
- Store in an airtight container to maintain softness.
