Soft and chewy Biscoff Cookie Butter Cookies, flavored with cinnamon and ginger, with optional add-ins for a festive holiday treat.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ¾ tsp baking powder
  • 1 tsp salt
  • ½ cup room temperature butter
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup Biscoff Spread
  • 1 ½ cup M&M’s (reserve some for tops)

Instructions

  1. Preheat oven to 350°F and line a sheet pan with parchment paper.
  2. Whisk flour, baking soda, baking powder, and salt in a small bowl. Set aside.
  3. Using mixer, cream butter and sugars 1-2 minutes. Add egg and vanilla, beat until combined, then mix in Biscoff spread 30 sec-1 min.
  4. Add flour mixture, beat until just combined. Stir in any add-ins.
  5. Scoop large rounded spoonfuls of dough onto pan 2 inches apart; lightly press cookie balls.
  6. Bake 12-14 minutes until edges are golden. Cookies will still be slightly gooey inside.
  7. Transfer to wire rack and cool 10 minutes before serving.

Notes

  • Do not overbake; cookies continue cooking after removal from oven.
  • Optional: add nuts, chocolate chips, or holiday sprinkles.
