- 1 ½ cups all-purpose flour, spooned and levelled
- ¼ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 ¼ cups milk
- 1 large egg
- ¼ cup vegetable oil (or melted butter)
- 1 tablespoon vanilla extract
- ⅓ cup rainbow sprinkles
- For the icing: ½ cup powdered sugar, 1 ½ tablespoons milk, ½ teaspoon vanilla extract
Instructions
- Whisk flour, sugar, baking powder, and salt together in a large bowl.
- Whisk milk, egg, oil, and vanilla extract together in another bowl.
- Pour wet into dry ingredients and whisk until JUST combined; batter will be lumpy. Stir in sprinkles.
- Heat nonstick pan over medium heat. Scoop ¼ cup batter into pan; cook 2 minutes until edges dry and bubbles form. Flip and cook 1-2 minutes until golden.
- Combine powdered sugar, milk, and vanilla for icing; whisk until smooth.

- Serve warm with icing drizzled on top. Perfect for birthdays and celebrations.
