Ingredients

  • 1 ½ cups all-purpose flour, spooned and levelled
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ¼ cups milk
  • 1 large egg
  • ¼ cup vegetable oil (or melted butter)
  • 1 tablespoon vanilla extract
  • ⅓ cup rainbow sprinkles
  • For the icing: ½ cup powdered sugar, 1 ½ tablespoons milk, ½ teaspoon vanilla extract

Instructions

  1. Whisk flour, sugar, baking powder, and salt together in a large bowl.
  2. Whisk milk, egg, oil, and vanilla extract together in another bowl.
  3. Pour wet into dry ingredients and whisk until JUST combined; batter will be lumpy. Stir in sprinkles.
  4. Heat nonstick pan over medium heat. Scoop ¼ cup batter into pan; cook 2 minutes until edges dry and bubbles form. Flip and cook 1-2 minutes until golden.
  5. Combine powdered sugar, milk, and vanilla for icing; whisk until smooth.
