- 115 grams unsalted butter (cold)
- 190 grams brown sugar
- 1 teaspoon vanilla extract
- 1 large egg (cold)
- 245 grams all-purpose flour
- 1 tablespoon cornstarch
- 1/2 teaspoon baking soda
- 225 grams dark or milk chocolate (chopped)
- 50 grams walnuts (roughly chopped)
- Sea salt flakes (for garnish)
Instructions
- Preheat your oven to 180 C (350 F) and line two baking trays with parchment paper.
- In a large mixing bowl, combine cold butter and brown sugar using an electric mixer until well mixed. Add vanilla extract and cold egg; mix until just combined.
- Gradually add flour, cornstarch, baking soda, and salt; mix until a soft dough forms. Gently fold in chocolate and walnuts.
- Use a cookie scoop to portion out about two tablespoons of dough per cookie onto the prepared trays, leaving space between each.
- Bake for 12-14 minutes or until golden brown. Let cool on the tray before transferring to a wire rack and sprinkle with sea salt flakes.
