These Apple Fritter Bites are addictive little bites of doughy, apple-studded bliss with a sweet apple cider glaze.

Ingredients

  • Nonstick cooking spray
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium)
  • For glaze: 2 cups powdered sugar, 1/3 cup + 2 tbsp apple cider or juice

Instructions

  1. Preheat oven to 400°F and grease a baking sheet with nonstick spray.
  2. Whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, whisk melted butter and sugar, then add egg, vanilla, and applesauce until smooth.
  4. Add dry ingredients to wet, stir until combined, fold in apples.
  5. Scoop 1 tbsp portions onto baking sheet, bake 10 minutes.
  6. Make glaze by whisking powdered sugar and apple cider until pourable.
  7. Brush some glaze on warm fritters, broil 2-4 minutes until caramelized.
  8. Remove from oven and brush remaining glaze. Let sit 15 minutes before serving.

Notes

  • Use a few inches apart when scooping to allow space for spreading.
  • Let glaze set fully before serving.
