Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugars until light and fluffy.
- Add egg, vanilla, and apple cider; mix until smooth.
- Whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Add dry ingredients to wet and mix until combined.
- Fold in diced apples gently with a spatula.
- Scoop dough onto baking sheet and bake 10–12 minutes.
- Let cookies cool, then drizzle with apple cider glaze.
Notes
- Use tart apples for best flavor and texture.
- Chill dough if it feels too soft to scoop.
- Reduce cider on stovetop for a stronger flavor.
- Add nuts for a crunchy variation.
