  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 30 g protein powder (optional)

For the Frosting

  • 4 oz cream cheese, softened
  • 15 g protein powder (optional)
  • Monk fruit sweetener, to taste
  • 1/4 teaspoon vanilla extract
  • 2–3 teaspoons unsweetened almond milk, as needed

Instructions

  1. Preheat oven to 325°F (165°C) and line a square baking dish with parchment paper.
  2. Whisk together almond flour, protein powder, monk fruit sweetener, baking powder, and salt.
  3. Add eggs, coconut oil, Greek yogurt, and vanilla extract. Mix until smooth and thick.
  4. Spread batter evenly in the baking dish and bake for 20–25 minutes until edges are golden. Cool completely.
  5. In a small bowl, mix cream cheese, protein powder, vanilla, almond milk, and monk fruit until smooth.
  6. Spread frosting over cooled bars, slice into 16 squares, and refrigerate for 30 minutes before serving.
